Perseo Veneto Rosso

Perseo is the fruit of an idea developed over time with the desire to obtain great structure combined with an elegant aroma. It is produced with Merlot and Cabernet Sauvignon grapes that, after the harvesting, undergo a 4 week drying period in a fruit storage structure. After an 18 day fermentation, the wine is decanted in tonneaux oak barrels. Then it is bottled and left to age before it is available for our customers. It is a full bodied wine, with rich fruity sensations that confirm the notes of the aroma, and with a particular persistent flavour. Perseo is recommended with red meats and matured cheeses. It is also particularly good on its own.

Local pairings

There is no family in Verona that does not have its own recipe for Pearà, handed down from mother to daughter from generation to generation!
Pearà is basically a recycling sauce, prepared with leftover hard bread, ox bone marrow and broth, which accompanies boiled mixed meats on special occasions.

International pairings

The Peking Duck, a traditional Chinese imperial dish, features the famous roast duck with its crispy skin accompanied by hoisin sauce, bowls of julienne-cut vegetables and wheat pancakes. The complexity of the dish calls for the pairing with a sensual wine with expressive aromaticity such as Perseus that can enhance the aromatic combination, umami and richness of nuance of this wonderful Asian dish.
