The tench is well suited to the preparation of sauces. In fact, for the preparation of this tasty and characteristic risotto, one starts by stir-frying a little tomato sauce, a pinch of cinnamon and tench meat.
Next, the rice is added and cooked with broth until it becomes soft. The creaminess of the dish and the delicate yet very present spiciness are balanced by the minerality and intensity of the Lugana Benedictus.
